PATTAYA, THAILAND – A veteran German restaurateur has taken over one of Naklua’s best-known eateries, promising continuity with subtle changes at the popular Bramburi Restaurant.
From Schleswig-Holstein roots to a Pattaya landmark
Born in 1972 in Heide, Schleswig-Holstein, Stephan grew up in a family that operated a snack van and later several small businesses across northern Germany, shaping his lifelong commitment to gastronomy. With only brief excursions into other fields, he remained closely tied to the restaurant trade, which became his vocation and ultimately led him to Thailand.
In the years before his move, he was deeply embedded in Hamburg’s food scene, working for several years at the legendary snack bar “Lucullus” in front of the famous Davidwache police station on the Reeperbahn. There he experienced the city’s nightlife at close quarters and learned to perform under pressure while keeping every guest satisfied, experience he now regarded as invaluable for his new role in Pattaya.
Winters in Thailand turn into permanent relocation
In the years leading up to his emigration, Stephan spent between one and three months each winter in Thailand, initially to escape the German winter. Over time, those stays became something more, as he felt increasingly drawn to the country and its people, describing the warmth, calm and friendliness he encountered as speaking directly to his heart.
His eventual decision to leave Germany for good evolved over several years and hardened with each return from Thailand, as he found the prevailing mood back home increasingly difficult to bear.
“Unfortunately, in general everything has changed, and it became more and more difficult for me to escape the negative atmosphere,”
said Stephan, new owner of Bramburi.
Partnership and a shared passion for gastronomy
His relationship with his future Thai wife, who had herself worked in the restaurant trade for a long time, gave his relocation plan additional momentum. Suddenly, Thailand represented not only a place but also a person who made the country feel like a true home, combining a shared passion for gastronomy with a strong emotional bond.
This partnership also eased the practical side of the transition, as an experienced team was effectively in place before his first day as owner. With his move, Stephan aimed to build a long-term life in Pattaya rather than pursue a short experiment abroad.
A Pattaya institution with hearty German classics
The Bramburi Restaurant on Naklua Road Soi 12 had long been a fixture in Pattaya’s dining scene, regarded as a haven for fans of German cuisine and one of the city’s top addresses for authentic dishes. Combining quality cooking with friendly service and a cozy atmosphere reminiscent of a traditional German inn, it built a loyal base of regulars.
Rustic beer garden tables, a relaxed setting and generous portions at fair prices were hallmarks of the venue. Its menu featured German staples such as a pork knuckle considered among the best in Pattaya and a schnitzel so large it nearly covered the tray, both known for their crisp exterior and tender interior.
Takeover agreed as a “win-win”
When the chance arose to acquire Bramburi, Stephan did not hesitate, and discussions with the previous owner Thomas proceeded quickly and constructively. Both sides concluded that the handover offered a win-win situation, with Stephan immediately identifying with the existing concept.
His wife’s prior experience in gastronomy made the decision even easier, as they could start as a coordinated team from day one. For Stephan, the established reputation of Bramburi and its stable clientele provided a solid foundation for his plans.
Evolution, not revolution, for the concept
Stephan stated that he did not intend to radically change Bramburi but instead to guide it through a careful evolution, keeping the proven core concept that had worked for years. He planned to gradually incorporate his own experience from the Hamburg gastronomy scene into the restaurant’s operations.
Specific changes remained under wraps, yet he noted growing anticipation among long-standing regulars and curiosity from new visitors. Throughout, the focus would remain on consistent quality and the familiar character of the venue.
Renovations scheduled during seasonal closure
When Bramburi entered its company holidays at the end of April, Stephan planned to use the break for renovation work aimed at making the restaurant even more inviting and comfortable. While he did not yet disclose detailed plans, he emphasized that the investments were tied to a long-term vision for the business.
He said he was thinking in terms of years rather than months, with the goal of operating and developing Bramburi over an extended period. The improvements were intended to refresh the setting while preserving the restaurant’s established strengths.
Pattaya as a new home and community hub
For Stephan, Pattaya had already become more than just the location of his business, as the city on the Gulf of Thailand now felt like his true home.
“I simply like it in Pattaya,”
said Stephan, restaurant owner, describing his enthusiasm for the city and its atmosphere.
He reported consistently positive reactions to the takeover, including many good conversations, friendly encounters and a warm reception from the community. The blend of expatriates, tourists and local residents created an atmosphere in which he said he felt completely at home.
Keeping Bramburi a meeting place for German food lovers
Bramburi was part of a lively culinary scene in Naklua, somewhat removed from the busier tourist strip along Pattaya Beach and attracting a distinct crowd. Stephan said he looked forward to becoming an active member of this community and to further establishing Bramburi as a meeting point for lovers of German cuisine.
He aimed to maintain the beer garden feel, relaxed mood and authentic flavors as key features under his leadership.
“Of course I would be delighted if you all came by sometime and got to know us,”
said Stephan, new operator of Bramburi.

Bramburi Restaurant was located on Naklua Road, Soi 12, about 100 meters into the side street on the right-hand side, at 284, 79 Soi Na Kluea 12, Pattaya City, Bang Lamung District, Chon Buri 20150, Thailand. It could be reached for reservations or information by telephone at 094-761-4828, with on-street parking a short walk from the entrance.
Opening hours were generally from 11:00 to 22:00, with daily changing specials and events that turned each visit into a particular experience. The restaurant invited guests to enjoy authentic German cuisine in Pattaya’s relaxed setting and welcomed both long-time regulars and first-time visitors.
